Why Is Water Testing Important In a Food Service Operation Water testing is crucial in a foodservice operation because water plays a fundamental role in food preparation, cleaning, and overall hygiene. Ensuring that water is safe and free from contaminants protects customers, employees, and the business itself. Here’s why water testing is essential: Ensures Food Safety Contaminated water can introduce harmful bacteria (e.g., E. coli, Salmonella) into food and beverages. Ensuring clean water reduces the risk of foodborne illnesses. Meets Health and Regulatory Standards Health departments and regulatory bodies (e.g., FDA, EPA, local health agencies) require businesses to maintain safe water quality. Regular testing helps avoid fines, penalties, or shutdowns due to non- compliance. Prevents Cross-Contamination
Contaminated water can spread bacteria and viruses. Testing ensures proper sanitation and reduces risks. Protects Beverage Quality Water affects the taste and quality of beverages like coffee, tea, and soda. Testing helps detect issues like excessive minerals, chlorine, or bacteria that could alter taste and safety.
Water is used for washing produce, cleaning surfaces, and sanitizing equipment.
Page 08 I HOSPITALITY NEWS MAR
Maintains Equipment and Plumbing Systems Hard water or high mineral content can cause scale buildup in dishwashers, coffee machines, and ice makers. Testing allows businesses to install proper filtration or treatment systems, extending equipment lifespan. Ensures Safe Ice Production Ice used in drinks or food storage must be made from clean, potable water. Testing prevents ice contamination, which can lead to foodborne illnesses. Improves Customer Confidence Guests expect clean and safe water for drinking, cooking, and washing. A commitment to water safety enhances the reputation of the food service establishment. Detects Chemical Contaminants Water may contain harmful chemicals like lead, pesticides, or nitrates, which can be dangerous if ingested. Testing ensures water meets safety standards for chemical contaminants. How Often Should Water Be Tested? Municipal Water Supply: At least annually, as it is already regulated but can still experience issues.
If Issues Arise: Test immediately if there are signs of contamination (bad taste, odor, discoloration). By regularly testing water quality, foodservice operations can prevent health risks, comply with regulations, and maintain high food and service standards. AGENCIES THAT CAN ASSIST WITH WATER TESTING Well Water: More frequently (quarterly or biannually), as it is not regulated and is more prone to contamination. ENVIRONMENTAL PROTECTION AGENCY (EPA) U.S. FOOD & DRUG ADMINISTRATION (FDA) CENTER FOR DISEASE CONTROL & PREVENTION (CDC)

Waldorf Astoria’s Long-Awaited Reopening Is a Key Test for Luxury Condo, Hotel Markets
By EDDIE SMALL, C.J. HUGHES February 19, 2025, 6:03 AM
open later this year. M
ove-ins have started for the condos at the Waldorf Astoria, and the hotel portion of the project is set to
One of the most storied hotels in Manhattan is putting the finishing touches on its reinvention while trying to move on from its troubled recent history. The Waldorf Astoria, now a 47-story condo-and- hotel hybrid, has begun welcoming new residents to its Park Avenue site after years of renovations, delays and hundreds of millions in budget overruns. The landmarked property, which now features 375 hotel rooms with 375 condos above them, began closing on units this winter en route to a roughly $460 million sellout, while the hotel is expected to reopen by June. But the sales haul pales in comparison to the 10- year project's astronomical costs, a total of about $4 billion that include the price a Chinese firm paid to buy the property and then convert it. And a list of problems playing out in the background, including the worldwide pandemic and even a worker's death, have cast a dark cloud.
Indeed, as luxury travelers ready themselves for their chance to visit, the Waldorf's long- awaited condo sales have gotten off to a rather unassuming start, with only three hitting public records since closings began in January. The sluggish progress suggests buyers may be wary of the project or may have even walked away from signed contracts after years of mounting frustration "The pace has been modest at best," said Jonathan Miller, CEO of the appraisal firm Miller Samuel. "But the outlook going forward is probably better than it is today."

One of the most common questions entrepreneurs ask is: "Why should I pay a staffing company's high fees when I could end up hiring the wrong person?" It’s a fair concern. Hiring is a major investment, and nobody wants to pay for a hire who doesn’t work out. But here’s the reality—partnering with a staffing company isn’t a risk; it’s a strategic advantage. Why Using a Staffing Company Is a Smart Investment—Not a Risk Think about it this way: 500 of the Fortune 500 companies use staffing firms for their hiring needs. Why? Because they’ve done the math. When you factor in the costs of advertising, reviewing resumes, scheduling interviews, and the potential legal risks of hiring, working with a staffing agency often turns out to be the most cost-effective solution. The Real Value of a Staffing Partner Here’s why the right staffing partner is Guaranteed Protection on Your Investment Most reputable staffing firms offer a 90-day people who aren’t a fit. When you consider the saved time and resources, the cost per hire is significantly lower than handling recruitment in-house. A staffing agency does the heavy lifting— sourcing, screening, and presenting only the most qualified candidates. This means your team isn’t wasting time reviewing unqualified résumés or conducting interviews with worth the investment: Best Cost Per Hire
Exclusive Access to Top Talent Staffing firms have extensive networks and proactively reach out to highly qualified candidates—many of whom aren’t actively job-seeking. These replacement guarantee—if the new hire leaves or is let go within that time frame, they will provide a qualified replacement at no extra cost. This means your investment is protected.
hidden candidates wouldn’t be available through job boards or standard recruiting efforts.
Page 20 I HOSPITALITY NEWS MAR
Industry Expertise and Compliance A staffing firm is often a member of the American Staffing Association, an organization whose members follow certification/compliance programs and vow to abide by employment agreements. They understand your industry (many specialize in specific professions) and stay up to date on hiring laws, market trends, and salary benchmarks. Plus, agencies that are members of national staffing organizations adhere to strict ethical and professional standards, ensuring a reliable hiring process. Breaking Down the “High Fee” Myth At first glance, staffing fees may seem high —but let’s put it in perspective. • Time is money If your leadership team is spending weeks or months hiring for a position, that’s time they aren’t focusing on growing the business. • Lost productivity is expensive A vacant position can cost a company thousands in lost revenue and efficiency. A staffing partner fills roles faster, minimizing downtime. • Bad hires are costly The U.S. Department of Labor estimates that a bad hire can cost up to 30% of the employee’s annual salary. The right staffing partner helps prevent these costly mistakes. The Bottom Line Staffing agencies aren’t just about filling jobs —they are strategic partners that help companies hire smarter, faster, and with less risk. When you choose the right staffing partner, their fee isn’t just an expense—it’s a protected investment in your company’s future success.

We are the collective voice of our industry —and our members here in New Orleans—and we take this role very seriously. Our member-to-member communications provide for an exchange of ideas and timely updates on important issues in our community. We communicate to our members through print materials, scheduled meetings, monthly newsletters, and various social media channels. We also identify new services which can be provided to members to increase profits and operational efficiency. The Greater New Orleans Hotel & Lodging Association strives to create a positive, professional image of the lodging industry to the community. We maintain a visible, active role in issues that matter to New Orleanians —and we pride ourselves on fostering cooperative relationships with all business and tourism entities as well as local, regional, and national media. Lastly—and of great importance—we publicly and financially support efforts by the New Orleans Police Department and the New Orleans Police & Justice Foundation to continue the reduction of crime in our community.
