Aramark said this month that it is putting additional emphasis on premium spaces, while operators increasingly use chef- driven menus, local restaurant partnerships and upgraded suites and clubs to differentiate the fan experience. There's another advantage: visibility. If a hospitality company performs well inside a famous stadium, millions of consumers can experience its work, and major sporting events provide an enormous showcase for prospective clients. And the volume can be remarkable. Delaware North describes its high-volume foodservice capability as serving crowds of up to 100,000 people.
